Company Chicken Salad

This recipe is kind of like a cross between chicken salad and coleslaw. It's really good!
serves 12

Combine in a large bowl:
4 c. cooked, diced chicken
4 c. grated carrots
4 c. finely chopped celery
1 medium onion, chopped

Toss with:
3 c. mayonnaise or salad dressing

Chill. Just before serving, stir in:
2 large cooked potatoes, or 2 - 3 cups, if you prefer.
