Rico Enchiladas

my mom asked me to email her recipes often so i decided to post them here instead. Here is my enchilada recipe. It was given to me by Mark's family.

Buy mole with cocoa in it.

Stir mole with 3 cups water or chicken broth.

Heat up and stir in 1 tbsp. peanut butter.

If the mixture is too cold and gets clumpy, use the blender.

Buy a rotisserie - cooked chicken or cook your own. Shred the meat.

Put some mole in the bottom of your pan.

Heat the tortillas and dip in the mole so that the tortillas are totally covered.

Put some meat and cheese in the tortillas.

Put cheese on top of the enchiladas.

Heat in oven at 350 degrees for :15-:20.

Warm up the remaining mole or salsa and put some on top of the enchiladas when they are done.
