Braised Chicken with Orzo

12 Tbsp. olive or canola oil
2 c. orzo (I like Rice Select's tri-color orzo - plain, sundried tomato, and spinach flavors)
2 lbs. skinless boneless chicken breasts - cut into 1 1/2" chunks.
3 tsp. minced garlic
2 finely chopped onions
3 1/3 c. water
2 Tbsp. tomato paste
4 bay leaves
1 1/2 tsp. salt
1/4 tsp. black pepper

Heat 4 tbsp. of the oil in a skillet over medium high heat. Add the orzo and saute, stirring frequently, about :04-:05, until orzo becomes light brown. Immediately put the orzo in a bowl. Heat the remaining 8 tbsp. of oil in the skillet. Add the chicken, garlic, and onion. Saute over high heat :06-:08, or just until brown. Add the water, tomato paste, bay leaves, salt, and pepper. Stir well.
Put it in the pressure cooker and lock it up. Raise the heat to high and bringto high pressure. Adjust heat to stabilize the pressure and cook :06. Remove from heat and open it up. Stir in browned orzo. Lock the lid. Bring to high pressure, stabilize, and cook :04. If the orzo isn't tender, simmer, uncovered, :02-:03. Serves 8.
