Enchilada Casserole

1. Break 2 c. tortilla chips into small pieces with a rolling pin.

2. Brown:

1.5 lbs. ground turkey

1 medium chopped onion

3. Add and stir:

a little over a cup of salsa (10 0z)

2 c. diced tomatoes

4. Combine in a separate bowl:

12 oz. cottage cheese

1 egg.

5. Layer into casserole dish in following order:

tortilla chips

meat mixture

cottage cheese

Repeat the layers at least once ending with 8 oz. shredded cheddar cheese. Bake at 350 for :40.

This is one of Grace Cload's favorite foods. For that matter, I love it too!
